Ingredients for 4 people

For the mousse:

  • 350 g cream
  • 180 g Ceretà cheese. 
  • Salt and pepper.

For the preserve: 

  • 180 g Reineta apple (a variety from of La Cerdanya).
  • 90 g sugar.

Caramelised walnuts:

  • 250 g walnuts.
  • 125 g sugar.
  • 60 cl sugar.


Boil the cream, separately cut the cheese into small pieces, and then add the cream and leave the mixture to infuse for 10 minutes. Blend everything together, strain and put the mixture in a siphon with 2 gas charges. Cool and keep cold.

For the walnuts:

Put water and sugar on to boil and when the sugar starts to thicken, add the broken walnuts and do not stop stirring until they have caramelised

Presentation on the plate:

In the serving glass, add the preserve (which had previously been made) and then the blue cheese mousse and place the caramelised walnuts on top.
