• 8 pig jowls
  • 1 large onion, cut into pieces
  • 2 ripe tomatoes
  • 6 large cloves of garlic
  • 1 green pepper
  • 1 glass of white wine
  • a little white pepper
  • olive oil
  • salt


First clean the jowls. Then, put them onto a baking tray. Add salt and pepper and then olive oil. Add the onion and the green pepper (cut into small pieces), and finally, the garlic and tomatoes chopped into small pieces.

Then, put the baking tray in the oven at 180 ºC. When the jowls are half-cooked, add the white wine. Cook for one and a half hours and serve hot. For garnish, it is possible to add freshly grown haricot beans or mushrooms.
